Black Bean and Salsa Soup
INGREDIENTS 2 (15 ounce) cans black beans, drained and rinsed 1 1/2 cups vegetable broth 1 cup chunky salsa 1 teaspoon ground cumin 4 tablespoons sour cream 2 tablespoons thinly sliced green onion DIRECTIONS In an electric food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth. Heat the bean mixture in a saucepan over medium heat until thoroughly heated. Ladle soup into 4 individual bowls, and top each bowl with 1 tablespoon of the sour cream and 1/2 tablespoon green onion.

1 pkg. yellow cake 1 15 oz. can Coco Lopez cream of coconut 1 8 oz. can crushed pineapple drained 2 cups whipped cream or non- dairy whipped topping 2 Tbsp, coconut, toasted (optional) Prepare and bake cake mix in a 9x13 pan After cooled, poke holes in the top with a fork Spread cream of coconut evenly over top of cake Sprinkle pineapple over top and spread whipped cream over all sprinkle with coconut, chill until ready to serve

Southwest Pinto Bean Burgers
Burgers: 1/2 c. diced onion, 1/2 c. bread crumbs, 1/4 c. cilantro chopped, 2 tbls. jalepeno pepper minced, 2 tbls. reduced fat sour cream, 1 tsp. hot pepper sauce, 1/2 tsp ground cumin, 1/4 tsp freshly ground pepper, 1/8 tsp salt, 1 lg egg, 1 15 oz can pinto beans drained, 1 8 3/4 oz no salt whole kernel corn drained, 1 tbls canola oil, 5 whole wheat hamburger buns, 5 romaine lettuce leaves. Chile Mayo: 1/2 c. Mayonnaise, 1 tsp. ancho chile powder For mayonnaise just mix together and let stand until burgers are ready. To prepare burgers, combine the first 10 ingredients in a large bowl. Add pinto beans and partially mash with a fork or potato masher. Add corn and mix. Divide bean mixture into 5 equal portions, shaping each portion into 3 1/2 inch patties and refrigerate for 10 minutes. Heat canola oil in a large nonstick skillet over medium-high heat. Add patties to pan and cook 4 minutes on each side or until thoroughly heated. Place paatties on bottom halves of buns and top with 1 tbls chile mayonnaise, 1 letuce leaf and top half of bun. Enjoy!
